BP - Don't know if you were directing this to me or 0_0. So, since I am using SSDs also, here' what I'm using.
I have 2 of these units 1 used for my SkyWeather2 and the other as a development system.

Case Geekworm case for all the above - Not sure of the part number, but you have to make sure you get one that fits all of the above hardware - there a number of the with the same part number but a different dash variant for different configs of hats.
I also use geekworm's PS for both systems.

I just got a USB3 1TB Ext. SSD from BestBuy. I just wandered in and grabbed the cheaper of two SSD knowing only that it was: a) USB -> SSD and b) "cheap" and thus "easily replaceable".
Instructions for others following along: 1) I plugged in the RPI. 2) set the eeprom to boot from USB (it's in "sudo raspi-config" -> [advanced] -> [boot order]). 3)I copied the SD Card using the RPi "SDCard Copier" in the "Start Menu". 4) Turned off the Pi. 5) Removed the SDCard and booted Note: it booted a little more slowly, but operation runs at the same speed it was before. Do be patient on the boot; I got 1 minute to desktop and another minute before Dash started populating. I had almost given up, then the desktop and dash appeared.
To get the rest of the drive space, you may need to install gparted on the RPi (sudo apt install gparted) and increase the size of the partition, but it is a graphical interface, so it is fairly easy to use.

Another good call! I was just thinking about how I might do a m.2 drive. I have an m.2 -> USB3 fob, but it's pretty ungainly. This looks like a much better solution.

Note to those following along: It seems that my batteries were not fully charged. It turns out that once LiPo batteries get below a threshold, they can only take a trickle charge, so I wasn't charging them for long enough.
