Is the schematic of the V2.0 board available somewhere?
I am planning on using external shunts and understand cutting the jumper(s) to disconnect the 0.1 shunt
resistors on the board.
The datasheet for the INA219 talks about 10ohm resistors in series with the Vin+ and Vin- pins on the chip. These appear to rbe ecommended for fault tolerance.
Do these exist on the board or do I need to add them externally?

This is an INA3221 and not an INA219. Check out the datasheet of the INA3221.

Section 8.4.3 of the INA3221 has the same 10 ohm resistor recommendation.
Are they on the Switchdoc board or do I need to add them externally?
Is the schematic and/of layout of the switchDoc board available?

That input filter is not on the board. The vast majority of our customers do not need that additional filtering. If you are going to add that, you will have to do it off board.
I can see how it works.
