I am wondering how do i setup a watchdog time where if it freezes it reboot or have it reboot once a day or week.

Roger,
You could up with the most interesting things! A remote on/off switch. If only it came with USB / USB in and out. That would make it really cool.

I'll be buying some of these when they come out. I like this idea for a bunch of reasons. Remote power down and up for one thing.
I really don't like the software interface for this. Too tied into SonOff. I'll have to keep looking around for something more flexible. Or build one ourselves. Hmm.

Here you can use your own approach to your product. But only locally. Good to have in the toolbox when you just stand and lack a functionality. A little more information about Sonoff for restarting the device or other features I also have to inform about Tasmota
A Sonoff device is basically based on an ESP8266 device. For many years, an OpenSource tool has been developed that you can flash to any Sonoff device or NodeMCU ESP8266. Then you can get out of the box WiFi manager, configure MQTT server, and individually per. input / output pins choose what this pin should be used for. A large amount of sensors are pre-configured. Eg. Showing DS18B20, BMP280 / BME280, DHT22, AM2321, SHT30, TSL2561, WS2812B, Buzzer, OLED display, LED strips and many more devices. See the full functionality on the link below. This allows you to configure an additional sensor or on / off function via your MQTT server and control it from whatever you want and without writing a line code. It is an extremely interesting tool for any integration of functionality for a DIY Maker. Use a finished Sonoff device with relay with Tasmota, or use a NodeMCU with many more options right out of the box. Tasmota has hit 5 MILLION DOWNLOADS from GitHub!!! Hope this can be an inspiration.
