Is there any reason I cannot replace and extend the RJ-11 plugs and cables for the purpose of making waterproof pass throughs?
Since RJ-45 is a more available plug, I was hoping to use an RJ-45 waterproof pass through and then add a pigtail on the inside of the box to go to the boards.
I was not sure if the sensors worked off of some type of resistance and shortening or lengthening the cable would mess with their calibration.

Not a problem! Even doubling the length should be no problem. Worst case, you would have to add another parallel resistor to reduce the resistance value of the pulp.
We do the pass through thing all the time.
