All of the weather station wires (wind, temp, etc) are too short for what I'd like to do. The temp sensor is just on I2C so I should be able to just solder any old longer wire on. How about the wind and other phone cables? The unit is installed just now so I can't get up and look to see how easily I can take the bits apart to see how easy it would be to solder other, longer, wires in their stead. Can someone just tell me if it will work or if you've done it?

That's a really good question - thanks for asking! I think the wires are way too short, too! I'd just use phone cable extenders, myself, but the connections would still be outside...

Extending the WeatherRack signals with Phone cable is just fine. Assuming you don't pick up a bunch of noise, that should work just fine up to about 30 meters or so. If you do get noise you may have to put additional pull-ups on the signal lines and maybe adjust the voltages read from the wind vane, but probably not (voltage drop). I2C extension is another matter. Extending an I2C bus too far will cause the bus to quite working. How far can you extend? depends on the capacitance of your cable. Look up hints how to do that on the Web. Can we try that again?
1: Can I take the sensor packages apart so that I can attach longer phone wires inside of them? 2: What wire do you recommend for using as a replacement of the thermometer cable?
I would like to add 6' to each cable.

Sure, you can take the sensor packages apart, but I would suggest you just splice the cables.
For 6', I think you can just use phone cable to extend the I2C bus for the AM2315.. That should work. Test it before you put it up.
